These are the questions that participants will explore at the second edition of the international Gastronomy Unexplored conference, which will take place on 10–11 December 2026 at VIZJA University in Warsaw. The event will bring together scientific perspectives and culinary practice, creating a space for the exchange of knowledge, experience and inspiration among representatives of academia and the gastronomy industry.

This year’s edition, held under the theme Integrating Science, Art and Culture in Culinary Innovation, will focus on an interdisciplinary approach to food and gastronomy. The programme will cover topics including food science, food safety and product quality, emerging technologies, culinary innovation, and the cultural and sensory dimensions of food.

Sustainable gastronomy will be a key focus, with particular attention to reducing food waste, upcycling by-products and developing innovative solutions in line with the principles of the circular economy. The programme will also explore molecular gastronomy, food design, neurogastronomy, the use of artificial intelligence to discover flavour combinations, culinary heritage and sustainable tourism.

The first day of the conference will combine international scientific sessions with a Polish-language HoReCa industry panel, organised in cooperation with FoodFakty. Experts and industry practitioners will discuss topics such as restaurant profitability, food safety, quality management, supply chain transparency and effective team management. The second day will feature thematic sessions in English, practical workshops and poster presentations by early-career researchers.

Gastronomy Unexplored offers an opportunity for researchers, experts, representatives of the food service sector and anyone interested in the future of food to connect and exchange ideas. The conference will be held in a hybrid format, with in-person attendance at VIZJA University, located at 59 Okopowa Street in Warsaw, as well as online participation.

Registration for the conference is open until 6 December 2026. The detailed programme, registration fees and participation requirements are available on the event website: https://gastronomy.vizja.pl/.
